Storage of potatoes.
The correct way to store potatoes is either keep them in the dark place or keep them covered. Never store them under bright light. Potatoes naturally produce steroidal glyco-alkaloids (SGA’s) which are toxic in nature but these are naturally produced as a defence mechanism to protect itself from various pests. But, these SGA’s are produced in higher amounts when potatoes are stored under bright light and that’s the reason, potatoes are turned green ad start sprouting. If potato has turned green, that means higher amounts of toxic compounds will be present in that potato so be careful to choose right potatoes when you are buying them, when you are storing them and when you are cooking them.
