Herbs are so refreshing.
Always good to have them fresh from the garden. We Indian’s cannot survive without coriander and mint, as we use coriander to garnish our curries and mint to garnish our raita, buttermilk, salads, aam panna and even pasta.
When lots of herbs are growing in your garden, you can dry the herbs in shade and make a coarse powder, store it in a glass bottle at a cool place. Herbs contain essential oils and when we dry it in shade, the oils are not lost and therefore, flavours are retained.
If you will dry under sunlight or in oven, the process may be fast but essential oils will be lost as essential oils are sensitive to heat.
So, dry your herbs in shade, process may take few days but end result is great.
